Swiss Chard and Beans
This recipe is great as a side dish. It’s earthy and hearty, and great topped with some parmesan cheese. Swiss chard is a beautiful vegetable that kept growing in my garden this year, so I’ve made a lot of different dishes out of it.
Ingredients
Swiss Chard
Onion (yellow, or red)
Garlic
White Beans
Vegetable Broth
Red Wine Vinegar
Parmesan Cheese
Preparation
Wash chard well. I use a salad spinner. Separate swiss chard leaves from the stems. Finely chop the stalks and coarsely chop the leaves. Set the leaves aside. Finely chop onion, and slice garlic.
In a medium saucepan, add the onion and swiss chard stems. Sautee for 20 minutes on low-medium heat in some olive oil. Right before you’re ready to serve, add some vegetable broth, the leaves, white beans, and red wine vinegar, Mix together on medium heat until the leaves start to wilt (usually takes 4-5 minutes)
Serve immediately, add parmesan cheese if you like.
