Applesauce Muffins
These have replaced my zucchini muffins, mostly because I made a ton of applesauce over an open fire and now it has to go somewhere. The applesauce gives them a subtle smoky flavor. They’re kind of perfect. I love having muffins kicking around the house.
Ingredients
*makes about 10-12 muffins
~1 ¾ cups all-purpose flour
~1 tsp baking soda
~½ tsp baking powder
~½ tsp salt
~1 ½ tsp cinnamon
~¼ tsp nutmeg
~½ cup brown sugar
~¼ cup granulated sugar
~1 cup unsweetened applesauce
~⅓ cup olive oil
~¼ cup of almond milk
~1 tsp vanilla
Preparation
Heat oven to 350°F. Grease a muffin pan with butter or a neutral oil you like.
Whisk together the dry ingredients: flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
In another bowl whisk the wet ingredients: sugars, applesauce, oil, milk, and vanilla.
Fold the dry ingredients into the wet just until combined. Don’t overmix.
Divide into muffin tins, filling about 3/4 fill (they rise a bit)
Bake for 20-22 minutes until a toothpick comes out clean
Let cool for about 10 minutes before removing from the pan.
